It’s spring time raiders! I don’t know about you, but I love spring. The sun comes out, the flowers bloom, you have beautiful rainy days. There is so much to look forward to! One thing people don’t think a lot about is spring foods. Well, fear not! I’m going to tell you all about some yummy food to make on a rainy or sunny spring day.
Deviled Eggs
I know this one isn’t for everyone, but it’s one of my favorite spring things to eat.
Ingredients:

- 2 tablespoons of Mayonnaise
- 1 teaspoon white sugar
- 1 teaspoon White vinegar
- 1 teaspoon Mustard
- ½ teaspoon Salt
- 1 pinch of Paprika
- 1 tablespoon finely chopped Onion

- Peel hard boiled eggs
- Cut the boiled eggs in half and remove the yoke and put them in another bowl, and set the whites aside on a tray.
- Mash the yoke with a fork
- Add the sugar, vinegar, onion, mayonnaise, and mustard
- Mix content in the yoke bowl
- Add salt and paprika in a given amount, or to taste in the bowl, then mix together.
- Scoop, pipe, or stuff the egg yolk mixture into the egg whites.
- Sprinkle Paprika over the top then put into the fridge until ready to serve!

Homemade Peeps
Peeps are so cute and yummy! If you don’t want to go out and buy them, here is another way to make them.
Ingredients:
- Peeps:
- One packet of gelatin
- ⅓ cup of cold water
- 1 cup of sugar
- Another ¼ cup of water
- 1 teaspoon vanilla extract
- cocoa powder + tiny bit of water, optional – for eyes
- Colored sugar:
- 1 cup sugar for each color
- Food coloring
Steps:
- Peeps:
- In a mixer bowl, put ⅓ cup cold water.
- Empty packet of gelatin over water and let sit while you make sugar mixture.
- In a saucepan, combine 1 cup sugar and ¼ cup water. Swirl to combine well.
- Using a candy thermometer, heat over medium heat until it reaches soft ball stage (238 F). Do not stir during this process. If crystals form on pan walls, use a brush with water to dissolve it back down.
- When at 238 F, remove from heat and slowly pour into the mixer bowl with gelatin.
- Stir by hand for a couple minutes to break any gelatin lumps.
- When cooled slightly, place on a mixer with whisk attachment and combine at medium-high speed until white and somewhat stiff. About 8-9 minutes.
- Immediately transfer to a large piping bag (14″ works well) with ½” tip. (Alternatively, use a gallon Ziplock bag with corner cut.)
- With colored sugar in a shallow dish, pipe chick shapes directly into the sugar.
- If the shape doesn’t hold, let the mixture cool for a minute or two and try again.
- Use a spoon to cover marshmallow chicks with sugar.
- Let cool for 30 minutes on a tray.

- Colored Sugar:
- Combine 1 cup sugar in a Ziplock bag with the food coloring
- Mix until well combined, several minutes.
- Sift larger pieces out
